"Pulled Pork" Sandwich

Kicking up our traditional pulled "pork" recipe up a notch! So hearty and filling, almost like a old fashioned sloppy joe but the adult version packed with way more protein and goodness.
Preheat oven to 375F, cut open bag of vegetable wedges and place on tray into the oven for about 15-18 minutes ensuring internal temperature reaches 74C. Slice bun in half, spread chipotle avocado mayo on either side and pop in oven for about 2 minutes just to warm up. Place filling on the base of the bun, top with coleslaw and finish with other half of the bun. Serve wedges on the side and sprinkle with crispy shallots.
