Preparation

Layer and drizzle dressing over or toss altogether, the choice is yours! Finish with toasted almonds for added nutrients and crunch.

These greens are rich in vitamins (A, B complex, C, K) and iron. Foods such as leafy greens are powerful in fighting inflammation in the body. The added parsley, a superpowered aromatic herb that fights bacteria, parasites and fungus, is also packed full of vitamins and minerals.

Vitamin A: This dish supports the immune and inflammatory functions throughout the digestive tract. Romaine lettuce, kale, and carrots are excellent sources of vitamin A.

Vitamin B Complex: B vitamins are building blocks for a healthy body and help turn other nutrients into energy, and maintain a healthy metabolism. Chickpeas and kale are rich in pyridoxine (B6 - may help with improving mood and brain health). Romaine and kale are rich in folate (B9 - supports fetal development and growth, and can help prevent cognitive decline).

Vitamin C: Vitamin C helps prevent damage to cells and helps absorb iron in the intestine. Kale, mixed greens, apples, and oranges are excellent sources of Vitamin C.

Iron: Eating foods rich in iron such as tahini will help support transportation of vital oxygen throughout the body.
