A message from Chef Marilena - For me, a creamy pasta dish is the epitome of comfort. Perfectly cooked pasta tossed in a creamy cashew and bean bechamel, roasted corn and spinach, topped with a tasty tofu chorizo... that's a dream meal!
Preparation
Following the instructions provided bring 3L of water to a boil and reduced to a simmer to place pasta in for 8 minutes, followed by chorizo crumble for 6 minutes. To plate - Dish this pasta up on a plate to expose all the colour and layers found in the pasta followed with crumbling the chorizo ground on top finishing with almond parm for added golden dust. This dish also re-heats beautifully transfered to a heat proof dish for a quick 2 minutes in the microwave or in in a pan to avoid the boil in pouch approach.

Vitamin C: Vitamin C helps prevent damage to cells and helps absorb iron in the intestine. Cauliflower, kale, and sweet peppers are excellent sources of Vitamin C. Yellow peppers contain the highest Vitamin C per gram.
