Chef’s Inspiration

An ode for my love of Mexican flavours.  Sweet, smokey, colorful and bright – to me it feels like a little fiesta on your plate. 

Preparation

Preheat oven to 350F and place corn in oven til outer layer has browned. Submerg bag of chick’n in simmering water follow with sweet potato greens. Plate greens on the bottom of the plate, follow with corn elote and top with chick’n. Finish with drizzling avocado lime crema. 

Nutritional Highlights

This dish is rich in protein, fibre, vitamins (A, C, K), and iron.  Soy Curls are made from non-GMO, whole soybeans without chemical pesticides, preservatives, or additives. They’re also a good source of protein, fiber, iron, and potassium. Corn is a member of the grass family along with wheat and oats, and rice. It is also a phytonutrient-rich plant that provides antioxidant benefits.

Fibre: Fibre in this dish (corn, sweet potatoes, black beans) feeds friendly bacteria in the digestive tract. helping to maintain larger populations.

Vitamin B Complex: B vitamins are building blocks for a healthy body and help turn other nutrients into energy, and maintain a healthy metabolism. Corn and sweet potatoes are rich in pyridoxine (B6 - may help with improving mood and brain health) and corn, kale, and black beans are rich in folate (B9 - supports fetal development and growth, and can help prevent cognitive decline).

Vitamin C: Vitamin C helps prevent damage to cells and helps absorb iron in the intestine. Kale and sweet peppers are rich in Vitamin C with yellow peppers containing the highest Vitamin C per gram.

Vitamin K: Key to helping regulate the body’s inflammatory process. Kale is the top source of vitamin K.

Iron: Eating foods rich in iron such as Soy Curls will help support transportation of vital oxygen throughout the body.
