Chef’s Inspiration
I was not the biggest fan of squash and root vegetables until I started playing around with butternut, combining other ingredients to make the vegetable less sweet. This pasta seemed like a perfect pairing for me with sweetness from the squash balanced with fresh herbs and garlic in the pesto and the texture with the incorporation of beans and toasted hazelnuts. Overall yum!
Preparation
Following the instructions provided, bring 3L of water to a boil, reduce to a simmer and submerge bag of pasta in for 8 minutes, followed by my bag of roasted vegetables for 5 mins and my pesto for 2. Toss all ingredients together and transfer to plate or bowl of choice. Sprinkle with almond parm and fresh herbs if you wish, incorporate some baby arugula to lighten this dish up.
