A message from Chef Jordan - I worked alongside our commissary small business nieghbours Solecito to bring you this beautifully authentic mole sauce. A sauce that is so good, you can truly have it with anything. Thank you to Solecito for collaborating with us on this beautiful dish.
Preparation
Following the instructions provided, bring 3L of water to a boil, reduce to a simmer and submerge bag of tofu mole in for 8 minutes, followed by the hearty rice and beans for 6 mins. And a quick flash of the tortillas for 2 minutes. To plate - Say ole to your mole and fill the tortillas with the rice and bean mixture then carefully roll them. Scoop or pour desired amount of tofu mole on top, sprinkling a bit of tofu feta to see that beautiful contrast.
