From Chef Marilena: Minestrone is a traditional Italian thick soup, usually made with legumes and vegetables. This is a recipe that changes substantially depending on the region, just like paella is Spain.
Preparation
Following the instructions provided, preheat your oven to 375F and place your garlic toast onto a tray into the oven for roughly 2 minutes. Bring 3L of water to a boil, reduce to a simmer and submerge bag of minestrone in for 8 minutes. Pour into desired bowl and serve with garlic toast to the side, finish with truffle olive oil for added richness to this comforting bowl.
