Chef’s Inspiration

Almost like a deconstructed Vietnamese style salad roll. Layers of creamy peanut, hearty with noodles, crunch and a hint of acid to balance it altogether. 

Preparation

Bring a pot of water to a boil, reduce to a simmer and submerge both bag of peanut tofu and dry rice noodles in for 6-8 minutes depending on how you like the doneness of your noodles. Section off parts of your bowl with noodles, peanut tofu and pickled vegetables. Top with crispy soy curds.

This rice noodle bowl is rich in protein, vitamin A, and iron. Soy Curls are made from non-GMO, whole soybeans without chemical pesticides, preservatives, or additives.
