Chef’s Inspiration

Kicking up our traditional pulled "pork" recipe up a notch! So hearty and filling, almost like a old fashioned sloppy joe but the adult version packed with way more protein and goodness.

Preparation

Preheat oven to 375F, cut open bag of vegetable wedges and place on  tray into the oven for about 15-18 minutes ensuring internal temperature reaches 74C. Slice bun in half, spread chipotle avocado mayo on either side and pop in oven for about 2 minutes just to warm up. Place filling on the base of the bun, top with coleslaw and finish with other half of the bun. Serve wedges on the side and sprinkle with crispy shallots.

Nutritional Highlights

This dish is rich in protein, fibre, vitamins (A, B complex, C), and iron. Jackfruit has a low glycemic index and provides fibre, protein and antioxidants, all of which may promote better blood sugar control. It is also high in magnesium, vitamin B6, and antioxidants, and has been shown to enhance immunity, boost magnesium levels, and  improve digestion 

Protein: Soy is a complete protein and provides all the essential amino acids allowing the body to form proteins necessary for growth & development.

Fibre: Foods high in fibre in this dish (jackfruit, beans, sweet potatoes) feed friendly bacteria in the digestive tract. helping to maintain larger populations.

Vitamin A: Providing over 600% of the minimum daily requirement for Vitamin A, this dish supports the immune and inflammatory functions throughout the digestive tract. Sweet potatoes and carrots are excellent sources of vitamin A.

Vitamin B Complex: B vitamins are building blocks for a healthy body and help turn other nutrients into energy, and maintain a healthy metabolism. Sweet potatoes are rich in pyridoxine (B6 - may help with improving mood and brain health).  Asparagus and avocado are rich in folate (B9 - supports fetal development and growth, and can help prevent cognitive decline).
