Cajun Tofu

Gluten: Crispy Tortilla (garnish)
Spice Level: 🌶️🌶️

Chef’s Inspiration

Dirty rice is a staple in South American cooking, deliciously infusing aromatics into each spoonful which I think compliments the pepper tones of Cajun spice beautifully. Softened and refreshed by the creaminess of our home-made guacamole, I am confident that this bowl pairs perfectly with a nice cold cerveza!

Preparation

Follow timing on MANNA package, this time varies by +/- 3 minutes depending on the level of your simmer and how cold your fridge is. You want to ensure that the internal food temperature reaches about 165°F/74°C, piping hot.  Carefully cutting open each bag, begin by layering your desired amount of dirty into the bowl, followed by the tofu with roasted beans and a dollap or two (or three!) of guacamole. Sprinkle crispy tortilla on top - ole!
