Sambal Peanut Tofu with Shiitake Rice
Mixing lessons from a former Vietnamese co-worker and one of the "in-between job" resaurants that I worked in. This dish is inspired by the traditional accompaniment of a salad roll, simply delicious! The peanut sauce acts as the vessel that brings all the other ingredients together, this has always been a staff meal favourite.
Follow timing on MANNA package, this time varies by +/- 3 minutes depending on the level of your simmer and how cold your fridge is. You want to ensure that the internal food temperature reaches about 165°F/74°C, piping hot. Best eaten in a bowl, place shiitake rice on the bottom, followed by the vegetables, stacked with sambal peanut tofu allowing the sauce to travel all the way down to the rice. Garnish with chopped chili peanuts for texture and a touch of sichuan heat.
